Four nights on food: the ingredients the Real Coconut Kitchen is built on, the land they come from, and the future they can help to seed.

This is the kitchen as a laboratory. Daniella opens up the hero crops at the heart of the Real Coconut Kitchen, coconut and cassava among them: why she loves them, how we use them, and what else they make possible.
From the plate we follow them back to the field. What these crops mean for agriculture in Mexico, and then across the world. How small shifts in what we choose, and in how it is grown, can seed new projects and new possibilities.
One day is given to cacao, sacred to the Maya and rooted in this land. With a friend of the house who is an expert in cacao, we go into its culture and its craft here, and into the state of cacao across the world today.
Hands-on sessions with Daniella and the Real Coconut Kitchen: the hero crops, how they are prepared, and the recipes they carry.
The nourishment in them, how they grow, and why they are the foundation of how Sanará feeds people.
The agriculture of Mexico and the Yucatán, and the wider picture: the growers, the soil and the supply.
A full day on cacao with an expert friend of the house. Its place in Maya culture and on this land, the craft from bean to bar, and cacao across the world today.
Conversation on the projects and possibilities that can begin with a single ingredient, and how each of us can take part.

The April full moon rises on the second night, and Earth Day falls on the third day. An outline. The final programme is shared with guests before arrival.
